Trevor Blake

CHEF OPERATIONS MANAGER

Trev is one of our longer-serving chefs with bags of talent and even bigger bags of personality. After cooking in kitchens all over the country and as far afield as Thailand and Australia, he started with Peach in 2005 helping us to open the Swan in Salford. He then went on to head up the kitchen at The Black Horse in Woburn for over two years. Since becoming a partner in Peach in 2015, Trev is now one of our Chef Operations Managers. Together with Suzie Ayling, our Sales and Reservations Manager, and their children, Otis and Delilah, they are one of our much-loved Peach families.

Sarah Robinson

OPERATIONS MANAGER

Growing up in Solihull, Sarah discovered her passion for food and making sure people had a great time while waiting on tables at her local pub, The Peacock. At just 21 she found herself managing a Warwickshire gastropub. Then she helped open Bank Birmingham in chic Brindley Place, just as the city’s food scene really started to take off, before running a couple of her own gastropubs.

She joined Peach in March 2014 to open The High Field in Edgbaston and in 2016, becoming an Ultimate GM in November and a Partner in 2016. Sarah now looks after The Rose and Crown, The Almanack and The High Field as Op’s Manager, and is our Peach Pocket Rocket.

Hugh Houston

ULTIMATE HEAD CHEF

Hugh was born in Jamaica but grew up in the States in a family of foodies. His Dad was Head Chef at a hospital, which spiked his curiosity, and led him to do his catering internship in Estes Park in Colorado. Following his second passion, travel, Hugh found himself in the UK. He started his professional kitchen career at the RAC Country Club in Epsom which he thoroughly enjoyed, but eventually had to scratch that London itch, and made the move to the big smoke to be trained by the very best.

This is where his talent really became apparent. It was while working for Head Chef Daniel Woodhouse at Roux Fine Dining that the extraordinary world of food was opened up to Hugh, and his skill set flew through the roof. Daniel eventually moved to Boulters, Maidenhead, where in 2014 he finally managed to convince Hugh to join him and the two of them achieved an incredible two AA Rosettes in just one year.

It was July 2018 that Peach took over Boulters and where we had the privilege of meeting Hugh, who agreed to stay on as our Head Chef and we’re very lucky he did. It’s clear it’s not just his fabulous background that ensures his food is as good as it. Its Hugh’s endless passion, exceptional presentation and natural talent that makes us confident that wherever he’s cooking, its going to be outstanding.

We’re ecstatic that in March 2019, he agreed to take on the kitchen at The Richard Onslow, and even happier to proudly award him the title of Ultimate Head Chef at the end of 2020. He's now part of the Senior Team and will be helping us to achieve our goal of becoming the Best Gastro Pub on the Planet!
